In the treacle scone post from David Pendleton, you will have noticed mention of The 2021 International Scone Week. Well, our next baking creation is from the lovely blogger who has hosted this event on WordPress for the past few years.
Tandy Sinclair, the creator of Lavender & Lime, shares all sorts of baking tips and kitchen creations. She quite rightly deserves the title of “Meringue Queen”, as she mentioned in her post. Look at these perfect lemon meringues!!!

Nothing short of perfect really. I have tried making meringues in the past, they came out burnt. These do look angelic.

My experience with meringues is very similar. I was very intrigues when Tandy said she baked them for 4 hours and left them in the oven over night. Last time I made meringues, I think I baked them for only 2 hours, and it must have been a higher temperature. But yes, they had turned colour and were still soft on the inside which was worrying.
