This is what I call the I LOVE SUMMER CAKE. It is laden with summer fruits.
The strawberries are supposed to be in a heart shape ❤ but I know it doesn’t look quite right. Blueberries are in the centre of the heart. A ring of raspberries all around the edge. There are also freeze-dried raspberries and some glistening silver decoration baubles (I was going to type balls, but I know a few bloggers who would jump on that!)
The fruit is sitting on top of a layer of mascarpone cream.
I think I may have gone slightly overboard with the filling! I put a thick layer of mascarpone cream (with icing sugar to stiffen it) and then covered it with a layer of raspberry jam. I diced more of the summer fruits and put a layer on top of the jam and cream!
Do you think I put too much filling in? Oh well – I do love summer fruits!
Now for the best part about baking:
While I have been waiting for photos from other bloggers who are baking today. I have lots of cake to get through!

I made this cake called Aloha Cake, once. It had three different types of fruit, cherries, coconut, and was so delicious! Haha

Thanks Jeanne – this is a cake I often make in the summer when fruits are ripest. I did go a bit overboard with the topping this time – but nobody complained! Usually all the extra fruit I put into a summer fruits salad so if anyone feels they should avoid cake they can have fruit instead.

Looks great. I love the naked cake look. The bit dribbling out included. There can be no “too much filling” especially mascarpone. As a professional baker I can promise this. 😀

I used to make cakes with whipped cream and then when I discovered mascarpone I always use it now!
